PAN CAKE. AKA - "Pan-Cake." English, Country Dance Tune (12/8 time). G Major. Standard tuning (fiddle). AABB. The 12/8 jig "Pan-Cake" that appears in Benjamin Martin's The Magazine of Arts and Sciences (1756, p. 372) where it is identified as "A New Country Dance." It was reprinted in 1759 in Martin's Miscellaneous Correspondence of Sept. 1756. A tune with the title "Pan Cake" is one of the tunes missing from Northumbrian musician William Vickers' 1770 music manuscript collection. The title appears in the index, but the pages with the music are missing. It may be the Vickers' tune was the same as the one printed by Martin.
