"William's and Sullivan's" is labelled a 'jig' in Ryan’s Mammoth Collection, referring note to the familiar 6/8 Irish jig, but rather a "Straight Jig", a type of syncopated, duple-time, old-time banjo tune often sounding much like a schottische. The Straight Jig was a popular variety stage dance in the 1880's and 90's, whose movements were akin to (and a precursor of) a soft-shoe or tap dance.
